Ambrosia has been a part of my family’s Christmas as far back as I can remember. I love it. We would eat it by itself, with cookies, or a slice of fruitcake. It’s a wonderful holiday dish and simple to make.

I've sliced the ends off the oranges & getting ready to cut the peel off.

Either peel or cut the skin off of a number of oranges. (I saved the peels to make candied orange peels with later.) Using your kitchen shears, cut the oranges into bite sized pieces into a large bowl. Open a can of crushed pineapple and add it to the bowl. How much pineapple you add will vary to test. I like to have approximately 1/3 crushed pineapple to the amount of cut up oranges. Sprinkle cocount on the mixture & stir until you have enough coconut to suit your family’s taste.

Cool in the refrigerator for around 2 hours so the flavors will blend & the mixture will be cool. Enjoy a favorite Southern treat.
